Walnut Date Bars (courtesy of Elanaspantry.com)
 
1 1/2 cups almond flour
1/4 teaspoon sea salt
1/4 teaspoon baking soda
3 eggs
1/4 cup grapeseed oil
1/4 cup agave nectar
1 tablespoon vanilla extract
1 cup walnuts, chopped
1 cup dates, pitted and chopped
 
1. In a large bowl, combine almond flour, salt, and baking soda
2. In a medium bowl, combine eggs, oil, agave, and vanilla extract
3. Stir wet ingrediants into dry
4. Fold walnuts and dates into batter
5. Scoop batter into a greased 8.5×8.5 inch baking dish ( I greased it with coconut oil)
6. Bake at 350 degrees for 22-30 minutes (I did 30 and they came out perfect)
7. Cool and serve
 
*Note: I also made these with dried cranberries. They were great. I think you could use any dried fruit. I'm going to try dried apricots next.
