Soap Box

I love cooking not because I love to eat, but because food is my medicine. It allows me to live the life I want to live, moving and functioning without depending on anything else to achieve a reasonable level of health. It is a science and an art, requiring both halves the mind to execute. You should never get bored with food. Cooking should be fun and experimental. There will be failures and successes. Listen to your body. It truly will tell you what you need to eat. Learn to comply and eating what you need will become exciting. Pretty soon you will realize that the want is gone and you feel amazing. Want and need become one in the same. Get crazy. Experiment with all kinds of vegetables and meat. Kale sweet potato and meat









1 package of

2 lb beef

1 big onion

1 green

2 can of
Rotelle tomatoes with green chilies

1 big can
tomato puree

2 or 3 sweet
potatoes or yams



Chili powder


Cook the bacon till it is just shy of crispy. While the bacon is cooking
dice the onion and the green pepper. Blend the bacon and the grease to bits and
add to the bottom of a big pot. Put the onions and green peppers in to cook a
bit. While that is happening brown the 2 pounds of beef in a different pan.
After the onions are a little translucent and the meat is brown combine them
together in the big pot. Add the tomatoes and the tomato puree to the pot, plus
1 or 1.5 cans of water measured in the big puree can. Add diced up sweet
potatoes and bring to a boil. Let it simmer till the potatoes are soft. Add the
spices to the level of your liking while it simmers. Eat it twice a day for a


Sunshine Sauce

2 TBS lime

1 clove

½ teaspoon
red pepper flakes

coconut aminos

¼ teaspoon
rice vinegar

¼ teaspoon
dry ginger

¼ cup
sunflower butter

Dash of

¼ cup
coconut milk


everything except the coconut milk till it is all mixed, then add the milk and
finish mixing. Dip vegetables in it or use is as a stir fry sauce. Get


Basil Walnut Pesto

2 cups of
basil packed tight

½ cup fresh

1/3 cup
olive oil

1/3 cup

3 cloves

½ teaspoon

½ teaspoon


Blend all
this stuff together. I did not add the parsley the other night and it was good.
I play with amounts. Just do what tastes good.


Sex with Your Pants

1 avocado

2 frozen

3 big spoons
unsweetened cocoa

Coconut milk
(enough to get things spinning)


Blend until


Blueberry Yogurt

 1.5 cups

1 avocado

Juice of a

Spaghetti Squash

 Buy a big
yellow spaghetti squash.

If you are
rushed stab it repeatedly and microwave it for 15-20 minutes.

If you are
cooking at a chill pace cut it in half and roast it in the oven at 375 for 45
minutes or so.

Scrape it
out with a fork and fabricate an amazing dish.


Cauliflower Rice

 Cut the
flower into small pieces. You can use all of it with the exception of the green
leaves on the outside. Set up your food processor with the grater blade and get
busy. This can be messy, but it tastes good. Once you have your rice, microwave
it for 2 or 3 minutes then sauté it in your oil of choice with all kinds of
other vegetables and meat.


Pork Fried Rice

 3 TBS
coconut oil

1 onion

¾ pound of

4 TBS tamari

1 clove

1 head
cauliflower rice

2 eggs

1 cup peas

4 scallions


Heat 1 TBS coconut oil, add the onions and brown

Add the meat and 1 TBS tamari if meat is raw
sauté till cooked if it is precooked heat through

Add 2 TBS coconut oil and garlic and cauliflower
cook 3 minutes or so

Add eggs and the remainder of the tamari
stirring constantly

Add peas and scallions cook a few more minutes than


My Favorite Kale Situation

 Heat your
oil of choice. I choose toasted sesame oil. Slice red onions and throw in the
pan, cook a bit. Add things like cabbage mushrooms, sliced, already backed
sweet potatoes, ground meat, or any meat really, then pile the kale in and let
it cool down. Season it with salt, pepper and garlic powder. Get crazy and eat
it with a fried egg on top. The possibilities are truly endless.
